Thai Frittata/Fishcake Slimming World Recipe - Syn Free

I'm having to reboot my Slimming World journey having had three maintains in a row. So in an effort to get excited about Slimming World food again, I've been experimenting with new recipes. This one came about with some leftover mash and a tin of tuna from the store cupboard...

Thai inspired frittata - Syn Free Slimming World

I'll be honest, I'm not sure whether this is a frittata or a fishcake or even just a Thai potato cake but whatever it is, it's yummy AND syn free!

Thai Inspired Frittata
A frittata or a potato cake, either way this syn free Thai inspired dish is a great way to use up your leftover mashed potato.
  • 200g mashed potato
  • 120g tinned tuna, drained
  • 2 cm lemongrass, chopped finely
  • 0.5 red chilli, chopped finely
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp sweetener
  • 1 egg
  • Frylight
1. Mix the mashed potato and tuna thoroughly.2. Add the finely chopped lemongrass and chilli. Mix.3. Stir in the egg, soy sauce, fish sauce and lime juice. Season to taste. 4. Add the sweetener and mix.5. Cook in an frying pan with Frylight for 3-4 minutes either side. 6. Serve warm with a side salad.
