Chicken, Mango and Cous-cous salad - Slimming World

I'm currently in holiday preparation hell AND on medication that makes me constantly hungry so I'm really concentrating at the moment on preparing tasty, Slimming World friendly food. Enter the chicken, mango and cous-cous salad...

Chicken, Mango and Cous-Cous Salad
Slimming World friendly, tasty salad!
Ingredients
  • 1 chicken breast
  • 40g couscous
  • 2 spring onion
  • 1 lime
  • 0.5 can sweetcorn, canned
  • salad leaves, mixed
  • 1 mango, sliced
  • balsamic vinegar
Instructions
1. Grill the chicken breast until cooked through.2. While the chicken is cooking, boil a kettle and cover the couscous in water. You could add a stock cube for extra flavour. 3. Chop the spring onion and mango.4. When the couscous is cooked, stir in the spring onion, sweetcorn, mango, seasoning and the juice of the lime. 5. Arrange artfully on a plate with the cooked chicken and a handful of salad leaves. Drizzle over a little balsamic vinegar!
