Baked Mushroom Risotto - A Slimming World Recipe

I love risotto but my goodness, it can be so full of delicious but naughty ingredients. Starting Slimming World, I wasn't prepared to give up my risotto so had to figure out how to make it Slimming World friendly! Here's my recipe - I hope you enjoy!

Note - the recipe uses 2 Healthy Extra A's for 4 servings - or 1/2 a HExA for each serving.

Slimming World Baked Mushroom Risotto
A Slimming World friendly, easy-to-prepare baked risotto
  • 250g arborio rice
  • 250g chestnut mushrooms
  • 15g dried mushrooms
  • 600ml vegetable stock
  • 1 tbsp quark
  • 56g parmesan -grated
1. Preheat the oven to 200 celsius.2. Slice the mushrooms and add to an ovenproof dish with the arborio rice. Add the dried mushrooms.3. Pour over the 600ml of stock, season and stir. 4. Bake in oven for 30-40 minutes. Keep checking and remove once liquid has been absorbed. 5. Stir in quark and grated parmesan until the cheese is melted and the risotto is sticky.6. Serve!
